It can be done. Try this super-delicious, gluten-free, dairy-free, grain-free dish.

Crockpot Mexican Chicken

Put 4 chicken breasts in your crockpot
Cover with 1 jar of salsa – I used Amy’s Organic Medium Salsa

Cover it and turn it on!

Six to eight hours later you have a tasty chicken that is easy to shred. Put the shredded chicken over a bed of greens and add a dolop of guacomole or a few slices of avocado.

If it takes you more than 5 minutes, you must have made the guacomole from scratch and you get extra points from me!
